*Cool Carrot/Zucchini "Noodle" Salad

2 Servings


1 of each; orange, purple, and white carrot.

1 large zuchinni

1-2 green onion 

1 tsp. garlic powder

2 tsp. dried oregano

1 part ACV

2 parts EVOO

S & P to taste


  1. Peel, cut the ends off, and spiralize the carrots into a big bowl.
  2. Wash and cut the ends off the zucchini and spiralize into the same big bowl.
  3. Wash, cut ends off, chop, and place the green onion in the same big bowl.
  4. In a separate bowl add the last 5 ingredients and whisk.
  5. Pour the liquid into the big bowl with other ingredients and stir together.
  6. Cover and chill in the fridge for 1 hour to over night.
