*Honey Pesto Chicken

Prep all your vegetables on the weekend to prepare yourself for a quick weeknight meal like this!

2 chicken breasts

4 tbsp. pesto 

4 tsp. dried oregano 


4 tsp. of local honey  

1 small, chopped onion 

1 small, chopped tomato 

1 tbsp. EVOO 

2 tbsp. fresh chopped flat leave parsley


  1. SLATHER each side of 2 chicken breasts with pesto, homemade or pre-made. 1 tbsp. per side
  2. SPRINKLE each side of each breast with 1 tsp. of oregano per side
  3. SQUEEZE each breast with 1 tsp. of local honey per side
  4. PLACE 1/2 of a small, chopped onion and 1/2 of a small, chopped tomato into a casserole dish and place the breasts on top
  5. PLACE the other 1/2 of the small, chopped onion and the other 1/2 of the small, chopped tomatoes on top of the chicken
  6. COVER and bake at 375 degrees until fully cooked. Flipping half way through. It depends on how big the breasts are as to how long it will take to cook through. Use a thermometer. 
  7. TOP with a little drizzle of EVOO and some fresh chopped flat leave parsley.


This tastes like a pizza to me! I chopped mine up and mixed it in with some quick Asian style noodles. You could chop the chicken and mix it in with a salad and add a little apple cider vinegar to it or add some quinoa or rice with it. So versatile!
