*Cauliflower Mock Potato Salad

1 Head of cauliflower 

1 tbsp. Coconut oil 

1 tsp. Turmeric powder

1 tsp. Garlic powder

Cracked black pepper

1 tbsp. Lemon juice

1 Large chopped stalk of celery

1/2 Small chopped red bell pepper

3 Chopped green onion

1 tbsp. Relish or chopped pickle

1 tbsp. Dried dill

1 tsp. Paprika 


1/4 Cup mayonnaise or veganaisse


  1. PRE-HEAT oven to 400 degrees
  2. CUT 1 bundle cauliflower into bite sizes.
  3. ADD to a wax paper lined sheet tray.
  4. PLACE dollops of coconut oil all around.
  5. SPRINKLE turmeric powder, garlic powder, and some cracked black pepper.
  6. BAKE for 7-10 minutes on bottom rack in oven until fork tender.
  7. PLACE cauliflower into bowl and immediately stir in lemon juice, celery, red bell pepper, green onion, relish or pickle, paprika, and S/P.
  8. STIR in enough mayonnaise for a good consistency.
