*Lamb Stew (Slow Cooker)

This is a great stew by itself or served with some Fettuccini noodles.

Yields

4 servings

Ingredients

1 cup sweet rice flour

1 tbsp. ground sage

1 tbsp. garlic powder

Salt & Pepper

4 pounds of lamb meat for stew 

1-2 tbsp. of coconut oil 

1 medium diced onion

2 peeled/diced carrots

2 diced celery stalks 

3-4 cloves of chopped garlic

2 tbsp. dried rosemary

2 tbsp. dried thyme

2 cups of red wine 

1 6 oz. can of tomato paste.

a small bag of peeled (or unpeeled) red potatoes

2 bay leaves

1 32 oz. box of stock

water if needed 


Directions

  1. Combine first 4 ingredients on a plate and cover the chunks of Lamb in the mixture. 
  2. Bring 1-2 tbsp. of coconut oil in large shallow pan to a ripple.
  3. Gently place covered lamb into hot coconut oil and sear on each side. Do not over crowd the pan. You probably have to do a couple of batches. Do not cook through, you just need a sear.
  4. Place all the lamb into the slow cooker.
  5. Add onion, carrots, and celery to the slow cooker.
  6. Stir in garlic, rosemary, and thyme into the hot pan. Add some more coconut oil if needed.
  7. Add red wine or stock and scrape all the brown bits off the bottom from the searing of the lamb. That's where a lot of the flavor is; let wine reduce and simmer for 3-5 minutes.
  8. Stir in the tomato paste.
  9. Transfer that pan of yum into a slow cooker.
  10. Add to the slow cooker; red potatoes, bay leaves, stock, and (water if needed) to fill. You want everything to be submerged with liquid.
  11. Turn slow cooker on medium high heat for 6-8 hours. Depending on your slow-cooker. Mine is super hot on medium high heat, so I do a low heat. It still creates a little simmer.
  12. Make sure to taste it before you serve it. It probably needs some S/P.

Notes

For thicker soup, about a 1/2 hour before it's time to eat add the following...

  1. In a bowl add 1/2 cup sweet rice flour to room temperature water just until you get a paste like consistency. 
  2. Whisk mixture into slow-cooker.
